Beef quality traits of Nellore, F1 Simmental × Nellore and F1 Angus × Nellore steers fed at the maintenance level or ad libitum with two concentrate levels in the diet R. Bras. Zootec.

This trial was conducted to evaluate some beef quality attributes of Nellore, F1 Simmental × Nellore and F1 Angus × Nellore steers finished on feedlot. The effects of feeding regime and genetic group on shear force, thawing losses, cooking (leak + evaporation) losses, total losses and muscle fiber type, as well as carcass pH and temperature during 24 h of chilling were evaluated. There was a genetic group effect on shear force, where the beef from F1 Simmental × Nellore and F1 Angus × Nellore animals had lower values than Nellore animals. Carcass Quality and Genetic Selection in the Beef Industry AgEcon

A lack of high-quality beef has been cited as one of the primary factors for the 50% decline in beef demand from the mid-1970s to the last 1990s. Cattle producers argue that appropriate price premiums are not sufficient to encourage the production of high-quality cattle. Although some improvement in carcass quality can be made by the cattle feeding and processing sectors, substantial improvements in quality must include genetic progress. A hedonic analysis of four major U.S. beef seedstock producers indicates that bull purchasers place relatively high values on a bull’s ability to produce progeny with improved carcass-quality traits.

Factors Associated to Purchase of Quality-Labelled Beef AgEcon

The aim of the present study is to identify the factors associated to purchase of quality-labelled beef. For this purpose a total of 364 surveys were carried out on buyers of beef in three Spanish cities. The sample was divided into three groups of buyers according to the beef purchasing habits with a quality label. A logistic regression analysis was used to estimate the differences between groups. The results show the importance of the production region as a quality aspect. Income level, association of quality-labelled beef with “guarantee and tradition” aspects, purchasing frequency, place of purchase, production systems and lifestyles are all variables that enabled us to establish differences between groups.

Finishing strategies for steers based on pasture or silage plus grain and time on feed and their effects on beef quality Ciencia e Investigación Agraria

The aims of the present study were to compare the quality of grain-fed and pasture-fed beef and to assess the effects of two feeding periods on grain for finishing steers. A group of 75 steers were fed one of 5 finishing diets (n = 15 per diet): pasture for 90 d (P), oat grain plus pasture silage for 35 d (SO), oat grain plus pasture silage for 75 d (LO), wheat grain plus pasture silage for 35 d (SW), and wheat grain plus pasture silage for 75 d (LW). The physicochemical and sensory attributes and the fatty acid composition of the longissimus lumborum muscle were determined. Abstract: The objective of this work was to estimate allelic frequencies of the polymorphisms IGF2/MboII (G > T) of the insulin-like growth factor 2 (IGF2) gene, DQ499531.1:g.134A > T of the pro-melanin-concentrating hormone (PMCH) gene, and DQ667048.1:g.3290G > T of the RARrelated orphan receptor C (RORC) gene in beef cattle of different genetic groups, and to evaluate the associations between these polymorphisms and traits related to carcass composition and meat quality. Data on carcass and meat quality of 499 animals was used: of 313 Nellore (Bos indicus) and of 186 Nellore crossed with different taurine (Bos taurus) breeds. Resumo: A publicação traz informações sobre o projeto Carne Carbono Neutro (CCN) visa atestar, mediante um protocolo parametrizável e auditável, que a produção de carne bovina em sistemas de integração silvipastoril (pecuária-floresta, IPF) ou agrossilvipastoril (lavourapecuária- floresta, ILPF) proporciona a neutralização das emissões de metano entérico, bem como melhor conforto térmico aos animais em pastejo. O objetivo é validar o protocolo de produção de carne com neutralização das emissões de metano entérico que também incorpora diretrizes para o adequado manejo da pastagem e para produção de carne de qualidade (Protocolo CCN).

Steady Supplies or Stockpiles? Demand for Corn-Based Distillers Grains by the U.S. Beef Industry AgEcon

The projected expansion in U.S. corn-based ethanol production over the next several years has created concern that large surpluses of distillers grains may result. Most of the distillers grains currently being produced are consumed by the domestic livestock and poultry industries, especially the beef industry. A recent study by the Center for Agricultural and Rural Development projects that the U.S. ethanol industry could produce between 40 million and 88 million metric tons of distillers grains (dry matter basis) per year by 2011. Valuing Fed Cattle Using Objective Tenderness Measures AgEcon

Beef tenderness is critical in consumer satisfaction with beef steak products. Current fed cattle valuation systems do not differentiate carcasses based upon tenderness variation. However, considerable research indicates consumers are willing to pay more for tender relative to tough beef steak. This article develops a tenderness-augmentation to current fed cattle grid pricing systems. Using a large set of actual carcasses, we determine that a tenderness-augmented price grid would reorder fed cattle value by on average nearly $5.00/cwt dressed relative to current valuation methods. Substantial opportunity is present to improve beef tenderness through new price signals to producers.
